Som Tam (mango salad) for dinner.
We originally came with an agency, which brought us to Hat Yai. We stayed there for over a week and had some interesting adventures. The first day scared me, the second day we discovered Cafe Yen, which is iced coffee. You can get it for less than a dollar and it kicks Starbucks little tail. We started feeling right at home. We explored the huge night market with stalls and stalls of cheap, but cute clothes, and tons of food. Som Tam is one of my favorite dishes and you can get it vegetarian. I recommend doing so because they throw the weirdest looking seafood in it if you don’t. It’s a mango or papaya salad with chillis, beans, peanuts and the most delicious sauce. I also say nit noy prick because I am not a pro at the Thai spicy food YET. Stephan is slowly getting there, but tears and sweat do seem to trickle down his face every few times he decides on a spicy dish. We met lots of wonderful people through the agency. They seemed to put all of the Americans in the scary, run down, stinky hotel and all the British people in the nice guest house place down the street. Some of the people we were with discovered rotis for breakfast. They are like banana pancakes/crepes served with sweetened condensed milk and sugar. Delicious. They are a nice break from all the rice and noodles that these Thais can’t get enough of. We also met a man from Malaysia at the banana pancake place who helped us rent a tuk tuk driver for some exploring around Hat Yai and the Songkhla province. He loved Stephan and every time we ran into him he would come up with ideas for us to do for the day. That brings us to another post.

P.S. I am cramming in our days in Hat Yai in order to catch you up to where we are now. Hat Yai and our time with the agency was a whirlwind.
